Manhattan Clam Chowder

THIS IS MY YANKEE DOODLE IN A KETTLE…a family favorite!

 

4 strips thick bacon, diced

1 cup Yukon Gold , or white, potatoes, cut 1/4 ” cubes, divided

2 tbsp. minced garlic

1 sweet onion, diced 1/4 ” cubes

2 ribs celery, diced 1/4 ” cubes

2 carrots, diced 1/4″ cubes

1 green bell pepper, diced 1/4 ” cubes

1 sprig fresh thyme

2 sprigs fresh rosemary

4 cups clam juice

diced tomatoes, (1) 28) oz, and (1) 14 oz., with juices

1 tbsp. Old Bay Seasoning

Kosher salt, black pepper

2 cups chopped clams and juices

 

CHEDDAR BISCUITS

A perfect accompaniment to your wonderful soup, stew, or seafood pasta dish.

 

2 cups flour

1 tbsp. baking powder

1 1/2 tsp. kosher salt

1 1/2 sticks butter, cold

1/2 cup cold buttermilk*

1 egg, extra large

1 cup grated x-sharp cheddar cheese

Brush after baking:

butter, 4 tbsp, melted

garlic, mashed and minced

fresh parley, chopped

*For buttermilk alternative, use whole milk, lemon juice. 1/2 cup:1/2 tbsp.

SWEDISH MEATBALLS

This recipe is a family favorite for any special occasion, as an hors d’oeuvre.

 

1 medium onion, minced or grated

butter

1 lb. ground beef

1/2 lb. ground pork

1/2 lb. ground veal

1 cup plain bread crumbs

1/2 to 3/4 cup light cream

1 beef bouillion

1 egg lightly beaten

1 tsp. salt, dash pepper

1/2 tsp. allspice
